Pavlova

Possum Magic by Mem Fox is one of Australia's best known children's books in which a young possum becomes invisible and only regains visible parts one by one by eating particular Down Under foods -- Vegemite, lamingtons, pavlova among them. I have always wanted to experience these delicacies. Vegemite I decided I would not need twice; lamingtons (delicate cake with a thin chocolate frosting sprinkled with coconut) I hope to have again for sure; and pavlova... Well, pavlova is unbelievably good: a light meringue served with whipped cream AND ice cream with fresh fruit on top. Our pavlova experience started at the top of the scale when Marilyn prepared one, by special request, in Townsville. And she shared her recipe, along with those for ANZAC cookies and apple crumble.
